Fenugreek is a fragrant herb, (Trigonella Foenum-Graecum) of the pea, legume, or bean family (Fabaceae) and the seed is the fruit of the plant. Native to southern Europe and the Mediterranean region, fenugreek is cultivated in central and southeastern Europe, western Asia, India, and northern Africa. Now cultivated in India, Argentina, Egypt and Mediterranean countries (Southern France, Morocco and Lebanon). In India it is grown extensively in Rajasthan, Gujarat, Madhya Pradesh, Uttar Pradesh, Maharashtra and Punjab.

It is a cold season crop and is fairly tolerant to frost and very low temperature. The plants are erect, loosely branched, less than 1 metre tall with trifoliate, light green leaves and small white flowers, and produces slender, beaked pods, 10-15 cm long, each pod contains 10-20 small hard yellowish brown seeds, which are smooth and oblong.
