Mustard or mustard seeds are the produce of  the annual herb mustard plant. There are three varieties of mustard, the most common being black, followed by brown, and yellow or white mustard.

The black mustard is native to the Southern Mediterranean region, whereas brown mustard is from China introduced to Northern India. The yellow or white mustard is indigenous to Southern Europe. Mustard crop grows best in cool weather. These plants require very minimal care and is easy and inexpensive to grow, flourishes on many different types of soil, suffer from unusually few insect pests or plant diseases, and tolerate extremes of weather without serious harm. The flowers of the mustard plant are generally yellow but some varieties have white flowers too. After the flower grows and matures, it forms pods. The pods gradually turn brown. Harvest time is indicated when the leaves start to turn yellow.
